Lowland sugarcane

Cane grown on alluvial soil gives a clean, gently sweet juice with little acidity — a great base for natural fermentation.

In each expression we bring in hints of tea, cacao and coffee from Vietnam's highlands, creating layers of aroma that feel both familiar and new.

We buy directly from growers each season, favouring farms that do not burn their fields after harvest.
